Vegan, No-bake, Chocolate Peanut Butter Cookies

I have been baking nonstop for the last couple of weeks, and I think that these vegan, no bake, chocolate peanut butter cookies are probably the best things that I have made.

For one, it is super easy and takes only a couple of minutes to make. You do have to let

them chill for 30-60 minutes, but the actual active cooking time is so short. The ingredients are also things that you should already have at home, and while these aren’t exactly healthy, these are definitely a better alternative to other cookies. Finally, these cookies are actually amazing and delicious and so decadent, and you absolutely need to try them for yourself. Here is the link to the original recipe from “Love and Lemons” but I will include how I made them below because I changed the measurements a little bit to make a smaller batch!


  1. 2tsps coconut oil ~ TBH I don’t think that this is completely necessary, so if you don’t have it no worries, but it just helps everything melt together a little better

  2. 1-2oz Maple Syrup ~ I started with 1oz but had to add more in at the end

  3. 1-2oz Almond or Oat Milk ~ I started with 1oz but had to add more in at the end

  4. 1tbs Cocoa Powder 

  5. 1-2tbs Peanut Butter ~ I only added one, but you can add more if you really like peanut butter

  6. ¼ tsp Vanilla 

  7. ¾ cup Oats (I used quick oats, which worked fine)

Making the Cookies 

  1. Melt your coconut oil in a small saucepan over low heat

  2. Add in your maple syrup, milk and cocoa powder; stir until combined

  3. Add in your vanilla and peanut butter; stir until combined 

  4. Turn off heat and add in your oats; stir until combined

  5. If needed add more milk or maple syrup so that the consistency isn’t too dry 

  6. Scoop medium sized balls of the oat mixture onto a tray with parchment paper ~ these measurements make about 6-9 cookies

  7. Chill in fridge for at least 30 minutes

  8. ENJOY!!!
