Recipe for Healthy Fried Rice
Somewhat of a staple food in my house recently has been a healthy version of fried rice. It’s a great way to spruce up a meal and add extra taste to your grains. My favorite meal to eat it with is a veggie stir fry. The two pair so well together, and it’s also great for leftovers! You can always add shrimp, tofu, chicken, or any other protein that you like to make it a heartier meal! The recipe is below!
Ingredients:
1 tbsp Sesame Oil
1 tbsp Vegetable or Canola Oil
1 ½ cup Frozen Shelled Edamame
1 cup Chopped Peppers (any color, but I prefer red, orange, or yellow)
3 cloves Garlic freshly chopped/minced
1 tsp Fresh Ginger
1 ½ cups dry Brown Rice and 2 ¾ cups water (you can also use white rice with 2 ¼ cups water)
2 Green Onions chopped
¾ cup onion chopped (sweet white or red)
4-5 tbsp Soy Sauce
½ tsp salt (add more to taste)
½ tsp ground pepper (add more to taste)

Instructions:
*cook rice as directed
In a nonstick skillet or wok, add oils, edamame, peppers, and onions and cook for 2 minutes or until they begin to soften -- stir occasionally
Add garlic and ginger and cook for 1 minute
Add rice and green onions and mix
Add soy sauce -- evenly drizzle it and mix well
Add salt and pepper and mix. Add more to taste. Cook for 2 minutes
Mix these ingredients with your rice and enjoy!!
